Mysteries of Mole Unlocked

With the annual Mole & Mariachis Festival mere weeks away, it's time to get mole-literate! Today Carlos Ruiz of My Mom's Mole teaches an outdoor cooking class at the Santa Cruz Mission State Historic Park, a.k.a. Mission Adobe, on all things mole. Negro, Rojo, Amarillo, Oaxaqueno, Poblano, Ranchero, Dulce, Picante—you'll get to know them all and learn some secrets to making this rich and complex sauce from Mexico that combines spices, chocolate, peppers and seeds in a dark ambrosia of flavors. During the last hour the class will dine on mole (you can invite a guest), and you'll take some home too.
